Day Night Fried Kway Teow cooks up one hella tasty plate of fried kway teow with good wok hei.

This plate of fried kway teow uses the narrower type of kway teow instead of the wider types commonly used, and has a dry texture with sweet taste coming from the added sweet black sauce. Its portions are good, with the usual see hum, lap cheong slices, fish cake slices and eggs.

Instead of the usual way of stir frying with lard, crispy lard pieces are added as toppings after the fried kway teow is served on to a plate. A piece of green lime is provided on the side. Squeeze some green lime juice over the fried kway teow helps reduces its greasiness. Very, very nice indeed.
